Pack Your Lunch and Eat It Too!

Make lunch an enjoyable part of your day. Below are 5 ideas for easy lunches to take to work and will have your mouth watering by noon.

  1. Last night leftovers make tomorrow’s cuisine. Cooking a little extra meat or fish with dinner can be the main ingredient of a healthy delicious lunch the next day. Try a Greek chicken breast roll-up. Add leftover chopped chicken breast, sliced tomato, red onion, spinach leaves and a drizzle of olive oil to a pita, wrap and go.
  2. Scrumptious Salads. Balance salads with a protein like salmon, vegetables and some whole raw nuts. Mixed greens, salmon, chopped asparagus, and a few pine nuts make up a simple and tasty salad.
  3. Tantalizing Turkey Chili. Make a batch of turkey chili on the weekend and pre-portion into reheatable containers. Sprinkle on some fresh cheese and reheat in the office microwave.
  4. Add A Side Salad. Adding a salad to any meal helps you fill up on healthy vegetables. Pair it with either a can of low-sodium soup, a frozen pre-packaged meal, cheese and crackers, a roll-up sandwich, or even grab-and-go sushi from your local market.
  5. Spread it on. Hummus is a great source of protein. Spread it on pita bread, crackers, or whole grain bread. Add veggies like sprouts, cucumber, or red pepper.
